Pumpkin Pie Pancakes


I am what you would call one of those "all out" pumpkin people. When the season is right, I do everything pumpkin style!

I have been making pancakes from scratch since Squirrel was born. We really enjoyed making breakfast together. He was a great 1 year old, such a mild temperament. His brother on the other hand, well, him standing on a chair next to me while cooking would be a risk to his safety. He is all over the place, he doesn't sit still, he's grabby and has a short attention span. These days when I make pancakes I usually have to have Squirrel keep his little brother occupied so mommy can actually finish making the pancakes without the little one screaming and hanging onto my leg!

We always add something to our pancakes, whether we do banana, strawberry, strawberry banana, or apple cinnamon. We like to add that extra flavor. So I thought we would have fun with pumpkin, luckily it turned out nicely!

What you'll need:

1 cup flour
1 tbls sugar
2 tsp baking powder
1/8 tsp salt
1/2 tbls pumpkin pie spice
1 1/4 cup milk
2 tbls cooking oil
1 egg
1/2 cup pumpkin

Step 1: Mix dry ingredients together in large bowl, set aside.

Step 2: In medium bowl beat egg, add milk and oil.

Step 3: Add egg mixture to dry ingredients and stir until moist. Then add pumpkin and mix until blended.

Step 4: For perfect pancakes use a 1/3 measuring cup pour batter onto griddle (1). When batter appears dry around edges (2) and there are holes in the middle, flip (3). Check after a couple minutes, remove from griddle when golden. (I use a griddle with a non-stick surface, I do not use any cooking sprays, oils, or butter).


There you have it! Tasty, moist, pumpkin pancakes!

The kids loved them too! They each had more than me! Bug ate 6 of them!

  1. Now come on! This is the second pumpkin pancake recipe I've seen this week and I haven't had time to make any (but want to desperately!) I had to make my squash yesterday so maybe this weekend I'll have time to mess up the kitchen again with these beauties!

  2. OMG, I love pancakes, and I love pumpkin! What a perfect combination. I'm usually more of a traditionalist when it comes to pancakes (blueberries are about as fancy as I get), but I'll have to try this!

  4. I soooo have to try this. Especially since just recently entered the pumpkin loving world. So far my favorites are pumpkin penne, pumpkin cake delight, and of course I love me some pumpkin spice latte.
